marinated chickpeas



Can or two of chickpeas
rinse with cold water
add lemon or lime juice,
olive oil
salt and pepper

warm lentil salad


375g whole green lentils
bay leaves
1/2 cup olive oil
lemon juice
small red onion
ground cumin
coriander
mint
garlic

cook lentils with bay leaves
drain
chop coriander, and mint, onion, garlic
combine all ingrediants
serve warm.
(can also add, coriander seeds)

picnic fritatta


heat oven 175 deg C
scrub 6 potatoes and dice
heat oil & slowly cook potatoes with saffron
remove and spread in baking dish
slice 1 large onion and fry, add to potatoes
wash and trim 500g spinach
cook in saucepan and drain, add to baking dish
(layering is the key)
+ sliced tomatoes to the top
beat 12 eggs with salt and pepper
+ to dish
+ 200g goats cheese
top with herbs (parsley, coriander, mint, basil, chives, anything really)
+ grated cheese on top
bake for 45 minutes.
serves about 8...

pumpkin lasagne


roast pumpkin zucchini and carrot.
fry onion garlic capsicum anchovies spinach artichoke basil chilli
add tomato paste cream salt and pepper turmeric
layering the wholemeal lasagne sheets with roast vegetables then with the sauce.
finally add cheese and milk on the top of it all.
cover with aluminum foil in the oven for 45 mins.
then uncover and cook for another 15 mins.

vanilla & honey rice puddings.



100g short grain rice
1.2 L milk
zest of lemon
vanilla pod
125g honey
1/4 cup cream

rinse rice until water runs clear
put in pot with milk & lemon & vanilla
bring to simmer
45mins
until rice is soft
+ honey
+cream
stir
refridgerate and then serve.
